Rosa Mexicano Guacamole en Molcajete

Rosa Mexicano Guacamole en Molcajete RecipeRosa Mexicano is one of my favorite Mexican restaurants.  With locations all over the country, and even internationally, if you haven’t yet sampled their menu, you should make a point to visit a spot.  Their Mexican cuisine is sophisticated, yet plays on the classics.  Whenever I visit, I like to enjoy a huge bowl of their delicious tortilla soup and a short rib taco.

Table side guacamole is a huge hit.  I don’t think I’ve ever had better guacamole.  This recipe is an EXACT replication of their famous guacamole — straight from their cookbook, “Rosa’s New Mexican Table”.  It is beyond delicious.  Just be sure to share it with a friend so you don’t eat the whole darn thing!

whatyoullneedChile Paste

  • 1 tablespoon finely chopped white onion
  • 1 tablespoon chopped fresh cilantro
  • 2 teaspoons finely chopped jalapeño, or more to taste
  • 1 teaspoon salt, or more to taste

Guacamole

  • 3 ripe Hass avocados
  • 3 tablespoons diced plum tomato
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon finely chopped white onion
  • Salt as desired

directions

  1. To make the chile paste: Grind the onion, cilantro, jalapeño, and salt together in a molcajete (a Mexican mortar and pestle) until all the ingredients are very finely ground.  Alternatively, use a fork to mash all the ingredients to a paste in a wide hardwood bowl.
  2. To make the guacamole: Cut each avocado in half, working the knife blade around the pit.  Twist the halves to separate them and flick out the pit with the tip of the knife.  Scoop the avocado halves into the molcajete.  Repeat with the remaining avocado halves.
  3. Gently fold the avocado into the paste, keeping the avocado in as large pieces as possible. Add the tomato, cilantro, and onion and fold in gently. Add extra salt if necessary.
  4. Serve immediately right from the molcajete or bowl with chips and tortillas.
